Vegan Chickpea Salad

Hear me out. VEGAN. CHICKPEA. SALAD. It seriously tastes like chicken, yet there’s no meat at all! This vegan chickpea salad is so refreshing and perfect for summer. It’s a great option to serve to your vegan or vegetarian friends at the next neighborhood BBQ, or make for yourself for a work lunch!

Chicken salad sandwiches were my favorite as a child. There’s something about the combination of creamy sauce, savory spices, sweet grapes and crunchy celery that are just fantastic on a beautiful roll. This chickpea salad sandwich gives me the exact same vibes as my childhood but without the meat! I’m talking lunchbox with an ice pack and a note from mom vibes.

You might be asking, why should I try vegan chickpea salad?

Well, if you are vegetarian or vegan, this is a new brainer. It’s a delicious cooling lunch or dinner, and if you ever did enjoy chicken salad, you will feel the comfort in this new meal! If you aren’t vegan but are dabbling in adding plant-based protein to your lifestyle, chickpea salad is a great way to keep familiarity while trying something new.

I love that this recipe is easy, affordable, and SO TASTY! I cannot rave on enough. You can customize the seasonings to your liking, add more or less, or different ones. If you like grapes in your chicken salad, you will LOVE grapes in your vegan chickpea salad! And if you don’t, then don’t add them. My favorite part of savory dinner recipes like these are that it isn’t as much of a “science” as baking is, so you can customize the recipe a lot more.

Vegan Chickpea Salad

Vegan chickpea salad is going to be your new go-to meatless lunch. It is very easy, and tastes very similar to its meaty counterpart!

Ingredients
  

  • 15 oz canned chickpeas rinsed and drained
  • 2 tbsp vegan mayo of choice
  • 2 tbsp non-dairy plain yogurt
  • 1 tbsp brown mustard
  • 1 stalk celery chopped thin
  • 1/4 cup sliced grapes
  • 1/2 tsp poultry seasoning
  • 1/2 tsp dried dill
  • 1/4 tsp paprika
  • 1/4 tsp curry powder
  • salt to taste
  • black pepper to taste

Instructions
 

  • In a bowl, slightly mash the chickpeas with a fork.
  • Add the remaining ingredients to the chickpeas and mix well until they are evenly coated with the "dressing".
  • Taste the chickpea salad and adjust any of the seasonings to your liking.
  • Refrigerate until ready to serve. I suggest serving on a roll or with crackers! Enjoy!

Vegan Creamy Lemon Pasta

This vegan creamy lemon pasta is going to blow your mind. Vegan creamy pasta is such a comfort food, but some creamy sauces are so complicated. This pasta is made creamy with a really easy secret ingredient: hummus! Now your dairy-free dinner meal prep doesn’t need to be difficult at all.

I mean, come on, how gorgeous is that?! This is one of those vegan dinners that can be a really quick throw together meal or fancied up. The bright pops of green from the pea pod garnish photographs beautifully with the yellow pasta. More importantly, it adds a nice fresh sweet burst of flavor when you get a pea with a forkful of creamy pasta! Top it off with dried herbs if you’re in a rush or fresh herbs if you have the time and resources, and you’ve got yourself quite the vegan spring dinner!

Making vegan creamy pasta dreams come true

This pasta is also perfect for Spring. It is light and refreshing, but cozy enough to satisfy on a colder spring evening. For some reason, lemons always remind me of spring. I just can’t stand the thought of eating a lemony dessert in the middle of December. But the moment it hits March? Give me all the lemon! The fresh flavors of lemon and spring herbs really shine in this vegan creamy pasta.

My mom always made a gorgeous primavera pasta growing up, but that is loaded with heavy cream and other lactose-filled ingredients that my tummy can’t handle. So I like to think of this Vegan Creamy Lemon Pasta as an ode to that meal. The best part is, if you use a high protein noodle like Taste Republic or Banza, you don’t even have to pair a meat with this meal! Vegan Creamy Lemon Pasta

Vegan creamy pasta doesn't get easier than this creamy lemon sauce. One secret ingredient makes the sauce creamy and delicious in no time. Talk about a gorgeous spring pasta meal!

Ingredients
  

  • 8 ounces garlic hummus storebought
  • 1/4 cup unsweetened nut milk recommend almond
  • 2 tbsp lemon juice
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 zest of a lemon zested
  • 4 servings cooked pasta of choice
  • pea pods, parsley for garnish

Instructions
 

  • Cook your pasta according to directions and set aside. Save a few tablespoons of pasta water.
  • Add all your other ingredients to a food processor. Blend on high until smooth.
  • Add your sauce to your pasta with 2-3 tbsp pasta water. Stir to evenly coat.
  • Garnish with pea pods, parsley and another squeeze of lemon. Enjoy!
